Sweet Potato Black Bean Chili (test)

Ingredients

  • 1 tbsp olive oil
  • 1 item yellow onion, diced
  • 1 item red bell pepper, diced
  • 3 item garlic cloves, minced
  • 2 item sweet potatoes, peeled and cubed
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 2 cup vegetable broth
  • 1 tbsp lime juice
  • 2 tbsp chopped cilantro

Instructions

  1. Heat olive oil in a pot over medium heat and saute onion and bell pepper for 5 minutes.
  2. Add garlic, chili powder, cumin, and paprika; cook 1 minute.
  3. Stir in sweet potatoes, tomatoes, black beans, and broth.
  4. Bring to a boil, then simmer until potatoes are tender, 20 to 25 minutes.
  5. Season with salt, stir in lime juice, and top with cilantro.
