Sweet Potato Black Bean Chili (test)

Ingredients
- 1 tbsp olive oil
- 1 item yellow onion, diced
- 1 item red bell pepper, diced
- 3 item garlic cloves, minced
- 2 item sweet potatoes, peeled and cubed
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed
- 2 cup vegetable broth
- 1 tbsp lime juice
- 2 tbsp chopped cilantro
Instructions
- Heat olive oil in a pot over medium heat and saute onion and bell pepper for 5 minutes.
- Add garlic, chili powder, cumin, and paprika; cook 1 minute.
- Stir in sweet potatoes, tomatoes, black beans, and broth.
- Bring to a boil, then simmer until potatoes are tender, 20 to 25 minutes.
- Season with salt, stir in lime juice, and top with cilantro.
